Laminated cardstock? Laminated Glossy Picture Paper? Print front and back? Print one side and use card protectors?
Interested in getting feedback so I don't waste a lot of media searching for the best solution.

I'd recommended against glossy, and definitely don't laminate. I print on uncut label paper and stick them on real MTG bulk commons or basic lands. The trick is making sure no text shows through. It's counterintuitive, but swamps are the best and plains the worst. If I'm just print tokens or cards that are going to stay sleeved, I just print on 300-330gsm cardstock. Saves me a lot of sticking effort. I sleeve all of my cards anyway in tight fit clear plastic for durability. I also suggest getting a corner cutter if you are going to make a lot of cards.

I've printed a few on glossy paper, laminated them, then put them in card protectors. They are almost impossible to tell apart from the real cards. Card stock curls on me and is too flimsy in my opinion. The printing is too dull as well. Ive never thought about using labels over real cards. Pretty intuitive. Does that not increase the thickness though? can you tell when your holding the card?

I have two methods I assemble the cards I want printed onto a sheet in paint.net and use a custom back I made print the faces onto the card stock I use, then flip it put it back in the printer print the backs then cut them out on a paper cutter. The easiest way to test them is exporting them to cockatrice play with them until I know they are good then print them.
