Is there any way to make it so that the drop down choices can be organized instead of having a long list of each choice? And if so, how? Thanks.

Take a look at VS System for a good example of this. In your definition, you're going to make indented lists as such:
choice: name: Group A choice: Choice A choice: Choice B choice: Choice C choice:
name: Group B choice: Choice A
choice: Choice B
choice: Choice C
When you go to reference them later, you're going to make your list as usual but you won't need the indents but you WILL need to include the whole choice:
choice:
Group A Choice A: Your Value 1 Group A Choice B: Your Value 2 Group A Choice C: Your Value 3 Group B Choice A: Your Value 4 ...
